Lively's Chickpea Hummus

All ingredients come together in a food processor in just a couple minutes in this super customizable and easy recipe!

Ingredients 

1 - 8 oz can of chickpeas

1/2 tsp baking soda

4 oz of Mediterranean C

1 heaping tablespoon of tahini

1/2 tsp cumin

Salt to taste

Preparation 

1. Rinse chickpeas and add to a boiling pot of water, ensure there is enough water to cover the chickpeas and have 1.5-2 inches of water over top.

2. Boil chickpeas for 25 min with baking soda (this will soften the skin)

3. Drain chickpeas and add to food processor or blender

4. Add in 4oz of Mediterranean C, cumin, and salt to taste. Blend.

5. Drizzle tahini slowly while blending. You can add a tbsp at a time of ice water to smooth out the texture - until desired consistency. This can help keep the tahini from clumping up.

6. Garnish with a splash of olive oil. Serve with pita chips, fresh vegetables or put in your favourite sandwich!
