The Only Roast Chicken Recipe You'll Ever Need

This is a simple and delicious no-bullshit roast chicken recipe that will never let you down. The lemon and garlic infused olive oil in our Mediterranean C dressing will make every bite drool-worthy.

Ingredients:

  • 1 whole spatchcocked chicken
  • 1.5 tablespoons of salt
  • 4 oz of Lively's Mediterranean C

Preparation:

  1. Place your chicken in a large glass baking dish. Rub the salt all over your spatchcocked chicken (otherwise known as a butterflied chicken), trying to get salt into all of the creases. Spend some extra time getting salt under the skin of the breasts so that they are full of flavour.
  2. Cover both sides of the chicken liberally with Mediterranean C.
  3. Cover with plastic wrap and marinate for minimum 4 hours, and up to 48 hours for a really amazing flavourful chicken. 
  4. When you're ready to roast the chicken, preheat the oven to 375F. Place your chicken on a baking tray that ideally has a wire rack, so that the bottom of the chicken can get crispy and you can collect all of the drippings in the pan.
  5. After 45 minutes in the oven at 375F, take the chicken out to baste it. Collect the drippings from the pan and brush it over the chicken. 
  6. Turn the oven up to 425F and put the chicken back in for roughly another 15 minutes. The cooking time varies depending on your oven, so the first time you make this chicken just keep note of how long it takes for your chicken to look golden and crispy, you might need more than 15 minutes. If you're using a toaster oven with an air-fry function, put it in air-fry mode for the last 15 minutes for the crispiest golden skin! 
  7. Take the chicken out of the oven when its the perfect golden colour, and let it rest for 10 minutes before cutting into it. This step is super important if you want a juicy chicken!
  8. Enjoy!

    Notes: If you want to step this up a notch, you can melt 2 tablespoons of grass-fed butter with herbs of your choice to add in the basting step. Herbs we recommend: oregano, thyme, or rosemary. Add chilli flakes if you'd like a bit of heat!
